Avocado Toast with a Sunny Side Egg & Tomatoes
Ingredients:
1/2 Medium Avocado
1 Egg
1 Slice of Preferred Bread
1 Cup Cherry Tomatoes (Halved) or Preferred Vegetable
1 tbsp Butter (or Butter Substitute)
1 tsp Salt (can substitute Garlic Salt)
1 tsp Black Pepper (can substitute Red Pepper Flakes)
Directions:
- Cut 1 medium avocado in half. Spoon half of the avocado into a bowl and mash to desired consistency. Store the unused half for future use.
- Add 1 tsp of salt and 1 tsp of pepper to avocado mash for flavor. You can substitute garlic salt and red pepper flakes (or any other desired spices) for additional flavor.
- Over low heat, melt 1 tbsp of butter or butter substitute in a small frying pan. Once melted, crack the egg into a bowl and add to pan. Cook to desired consistency:
- Sunny Side Up (3 minutes or until whites are set).
- Over Medium (5-6 minutes until yolk is slightly set, flipping halfway through).
- Over Hard (7-9 minutes until yolk is fully set, flipping halfway through).
- Toast the bread slice in a toaster or toaster oven until preferred color is reached.
- Remove toasted bread and place on plate. Spoon and spread avocado mash onto toast. Season to taste with salt, pepper and other spices.
- Slide egg onto plate from pan.
- Add halved cherry tomatoes or other desired vegetables to plate.
- Serve immediately.
