Ingredients:
2 lbs ground beef or turkey
1 medium onion, chopped
1 package dry ranch mix
2 packages of taco seasoning mix or 8 tablespoons homemade taco seasoning (*recipe below)
1 16 oz can black beans
1 16 oz can kidney beans
1 16 oz can pinto beans
1 can RoTel
1 16 oz can diced tomatoes
2 16 oz cans corn
1-2 cups water
Directions:
- Cook meat and onion together until meat is browned. Drain the grease.
- Stir in ranch and taco seasoning.
- In a big pot, combine beans, tomatoes, RoTel and corn. Add meat mixture and desired amount of water.
- Simmer for 2 hours.
- Garnish with cheese, sour cream, avocado, or topping of choice.
* For a lower sodium option, I recommend making your own taco seasoning! Combine the following and add the amount listed above:
2 tbsp. chili powder
1 tbsp. cumin
1 1/2 tsp. smoked paprika
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. salt
1 tsp. black pepper
1/2 tsp. dried oregano
