Emily’s 2 Ingredient Banana Pancakes

2 Eggs
1 Banana, Mashed
1/2 tsp cinnamon
2-3 tsp Blueberries
Fruit of Choice for Topping


  1. Whisk the eggs together in a medium bowl.
  2. Mix the mashed banana into the eggs.
  3. Whisk together until blended and only a few lumps remain.
  4. Optional: Add cinnamon or blueberries for variety.
  5. If needed, spray the pan with a non-stick cooking spray. Cook over medium heat until the edges begin to brown. Flip and cook until cooked through.
  6. Remove from pan and transfer to plate.
  7. Enjoy with any desired toppings!
